This salad will improve in flavor if you leave it to marinate for a couple of hours in the dressing.
Ingredients
500g tomatoes
5 spring onions
1 tablespoon olive oil
1 tablespoon balsamic vinegar
20 fresh basil leaves
Salt & pepper to taste
Recipe Instructions
Prepare the salad.
Skin the tomatoes and slice them. Arrange them on a serving dish. Chop up the spring onions finely and sprinkle them over the tomatoes. Drizzle the vinegar and olive oil over the salad and place the basil leaves on top. Season with salt and pepper.
Cover and place in the fridge for a couple of hours before serving.
