Roast Onions Recipe

A great side dish for those veggie lovers
Yield: 8    Preparation Time:     Cooking Time:
A great vegetable to serve with a roast if you are short of other vegetables.


4 large onions, skin on cut into 6 wedges
3-4 tablespoons olive oil
A few sprigs of thyme
Salt and freshly ground black pepper

Recipe Instructions

Preheat the oven to 180C.

Bake the onions.
Lay the onions with the cut side up on a baking tray. Drizzle the olive oil over the onions and scatter with them with thyme. Cover with tin foil and bake for 1 hour. Remove from the oven and remove the foil. Put back in the oven and bake for another 30 minutes.

These can be baked in advance and reheated if necessary.
