A lovely marmalade that is great to serve with a great variety of meals.
Ingredients
3 large red onions, finely chopped
1tablespoon sweet chili sauce
1 tablespoon oil
50g brown sugar
125ml red wine
1 tablespoon mustard seeds
75ml balsamic vinegar
Recipe Instructions
Cook the onions.
Heat the oil in a pan and cook the onions and mustard seeds for 5 minutes.
Make the marmalade.
Add the brown sugar, sweet chili sauce and 75ml cold water and cook for 15 minutes covered. Add the red wine and balsamic vinegar and bring the liquid to the boil. Reduce the heat and simmer for 15- 20 minutes until it turns syrupy. Serve immediately.
