Pork Chops with Apples and Onions Recipe

An economical meal that is quick and easy to make.


1 tart green apple, unpeeled
2 onions
4 pork chops, ¾ inch thick
3 tablespoons vegetable oil
½ cup beef broth
1 tablespoon Dijon mustard
¼ cup flour
2 tablespoons frozen apple juice concentrate
½ teaspoon salt
Black pepper to taste

Recipe Instructions

Prepare the onions and apples.
Cut the onions into ½ inch wedges and cut the apple into ¼ inch wedges. Cook the onions and apple in 1 tablespoon oil for 2 – 3 minutes until just brown. Remove the onions and apple and set aside.

Cook the chops.
Mix together the flour, salt and pepper and drop the pork chops into the mixture. Heat 2 tablespoon of oil in a skillet and cook the pork chops for 4 minutes on each side until they are golden. Add the broth, juice concentrate and mustard and bring the liquid to the boil. Reduce the heat and simmer covered for 10 minutes. Turn the chops over and add the onions and simmer for another 10 minutes covered.

To serve.
Remove the chops from the pan and serve topped with the apples and onions.
