Onion Soup with Cheese Croutons Recipe

A warm and hearty onion soup that the whole family will surely love

8 onions, sliced
100g butter
1 liter chicken or veal stock
120ml sherry wine
1 tablespoon thyme, picked
Salt and pepper
16 slices of baguette
1 clove garlic
2 tablespoons olive oil
100g grated Swiss cheese, Cheddar or Gruyere

Recipe Instructions

Prepare the onions.
Melt the butter in a pan over a high heat. Before it browns add a patch of the onions and stir to let them settle. Sweat the onions for 5 minutes. When the onions start to brown add another batch and repeat the process until all the onions are brown and caramelized. This should take about 20 minutes.

Cook the other ingredients.
Add the sherry, thyme and the stock and season with salt and pepper. Stir together and make sure to scrape the bottom of the pan to get all the caramelized onion residue. Bring the mixture to the simmer and let it cook for 20 minutes.

Make the croutons.
Preheat the oven and then set the oven to its grill setting. Rub each slice of bread with garlic and brush with olive oil. Season with salt and pepper on both sides. Place them in the oven and grill for 1 minute on each side.

Serve the soup.
Spoon off the foam that has gathered on the surface of the soup and remove the soup from the stove. Spoon the soup into bowls and place the croutons on top. Cover the croutons with ample amounts of grated cheese and place these in the oven for a minute until the cheese has melted. Remove from the oven and garnish with the sprigs of thyme.
