This cool, slightly sweet salsa can be used to marinate vegetables or to accompany barbecued meats or to top toasted bread.
Ingredients
1 medium red onion
2 firm tomatoes
ΒΌ cup sherry vinegar or balsamic vinegar
4-5 fresh mint leaves
Recipe Instructions
Prepare the onions and tomatoes.
Slice the onions and tomatoes into paper-thin slices and finely chop the mint leaves.
Make the sauce.
Place the onion, tomatoes and mint into a mixing bowl then add the vinegar and mix together. Allow the mixture to marinate for at least an hour before serving.
