Onion Gravy Recipe

The ideal onion gravy for meat dishes and alike

This delicious gravy is great with meat pies, sausages and mash or toad-in-the-hole.


2 large onions
1 tablespoon flour
Red or white wine
Butter and olive oil for frying
250ml stock
Pinch fresh thyme leaves
Salt and pepper

Recipe Instructions

Prepare the onions.
Cut the onions in half and slice them finely. Mix together the butter and oil and heat it in a frying pan. Cook the onions slowly until they caramelize and turn a good brown color, this should take about 20 minutes. The browned onion gives the gravy its deep brown color and sweet flavor.

Make the gravy.
Sprinkle in the flour and stir to absorb the cooking fat and juices. Add a good dollop of wine and sprinkle in the thyme leaves. Mix together well. Add the stock a little at a time and let the gravy simmer for 10 – 15 minutes. Season to taste with salt and pepper.
