Onion and Tomato Salad Recipe

A simple, fresh and fat-free salad with influences from Cape Town.


1 onion, thinly sliced
½ cucumber, sliced
4 tomatoes, sliced
2 garlic cloves, finely chopped
1 green chili, deseeded and finely chopped
1 teaspoon caster sugar
2 tablespoons white malt vinegar

Recipe Instructions

Prepare the onions.
Pour boiling water over the onions and leave them to stand for 10 minutes. When the time is up, remove the onions and allow them to drain.

Make the salad.
Arrange the tomatoes and cucumbers on a serving plate and scatter over the drained onions.

Make the dressing.
In a large mixing bowl, mix together the chilies, garlic, vinegar and sugar and season with salt to taste. Mix this together thoroughly.

To serve.
Drizzle the dressing over the salad just before serving.
