Onion and Parsley Soup Recipe

The perfect onion soup for those warm summer days

A great soup that can also be made with spring onion and chives to add variation.


5 onions, peeled and thinly sliced
1tablespoon flour
1tablespoon vegetable oil
1 liter vegetable stock
A good knob of butter
2 tablespoons double cream
1teaspoon thyme leaves, chopped

Recipe Instructions

Cook the soup.
Heat the vegetable oil in a thick bottomed pan and gently cook the onions for 10 minutes until they are soft. Make sure not to color them. Add the butter and the flour and stir together for 1 minute. Add the vegetable stock a little at a time and season the soup with salt and pepper. Bring the liquid to the boil then reduce the heat and let the soup simmer for 1 hour.

To finish.
Add the cream and bring the soup back to the boil for a few minutes. Serve immediately.
