Onion and Leek Bisque Recipe

An appetizing onion soup that your loved ones will surely love

A thick pureed soup.


1 cup leeks, cleaned and chopped
1 cup onions, chopped
1 cup celery, chopped
6 cups chicken stock
1 clove garlic, chopped
¼ cup sour cream
¼ cup white wine
¼ cup heavy cream
¼ cup cream cheese
2 tablespoons butter
Salt and pepper, to taste

Recipe Instructions

Cook the soup.
Heat the butter in a saucepan and sauté the leeks, celery, onion and garlic until it is tender. Add the chicken stock and white wine and bring to the boil. Reduce the heat and allow the mixture to simmer for 30 minutes.

Puree the soup.
Remove the saucepan from the stove and pour the soup into a blend. Blend the ingredients together until smooth. Add the sour cream, cream cheese and the heavy cream and blend again thoroughly.

To serve.
Sieve the pureed soup and return it to the saucepan. Add salt and pepper to taste and bring the soup back to simmering point. Serve while still warm.
