Onion and Cider Soup Recipe

A luxurious onion soup with cider

This is a rich and luxurious soup, great if you need to use up a backlog of onions.


1kg white onions, finely sliced
500ml cider
1 litre chicken stock
75g unsalted butter
1 bay leaf
1 sprig fresh thyme
200ml pouring cream

Recipe Instructions

Cook the onions.
Heat the butter in a pan and sweat the onions until they are golden brown.

Cook the soup.
Add the cider to the pan and bring it to the boil. Let it boil until the liquid has reduced by half. Add the thyme, bay leaf, stock and cream and let this simmer for 30 minutes.

To serve.
Season with salt and pepper and serve with a warm loaf of pain de campagne.
