Onion and Blue Cheese Spinach Dip Recipe

A delicious dip that is easy to make.


1 tablespoon butter
4 cups spinach, coarsely chopped
¾ cup low-fat sour cream or plain yogurt
¾ cup crumbled Canadian blue cheese
1 ¼ cup thinly sliced onion or shallot
½ cup light mayonnaise
¼ teaspoon salt and pepper, each
220g kettle or hand-made style chips

Recipe Instructions

Cook the onion and spinach.
Melt the butter in a large skillet and add the onions. Cook the onions for 5 minutes stirring frequently until the onions are tender. Reduce the heat, cover and cook for another 15 minutes stirring occasionally until the onions are golden brown. Increase the heat and add the spinach, cook for 2 – 3 minutes until they are wilted then remove from the heat.

Make the dip.
Combine the cheese, sour cream and mayonnaise in a medium bowl. Mash the mixture with the back of a wooden spoon until the cheese is the desired consistency. Stir in the cooked onions and season with salt and pepper. Cover and place in the refrigerator for a least 1 hour to allow the flavors to blend.
