Leg of Lamb cooked with Onions and Rosemary Recipe

A very delicious lamb dish that is mouthwatering

This is a tender lamb dish that cooks in one pot.


½ leg of lamb (about 1.25kg)
1kg onions
300ml red wine
Handful of thyme sprigs
Large handful parsley

Recipe Instructions

Preheat the oven to 160C.

Prepare the lamb.
Season the meat well. Place the meat in a large casserole dish with 3 tablespoons of olive oil. Fry the meat for 8 minutes over a fairly high heat turning it occasionally until it has browned all over. Remove it from the casserole dish and put it aside until later.

Fry the onions.
Slice the onions thinly and place them in the casserole dish. Fry the onions for 10 minutes until they have softened then add a few of the thyme sprigs and cook for another minute. Season the onions with salt and pepper.

Bake the casserole.
Place the lambs on top of the onions and add the wine. Cover the casserole dish and bake for 3 hours in the oven.

To serve.
Remove the leaves from the thyme sprigs and chop the up the leaves with the parsley. Scatter this over the lamb before serving.
