French Onion Soup with Croutons Recipe

A delicious onion soup with croutons

This soup is packed with onion flavor and served with bread and salad makes a meal all on its own


4 medium sized onions
850ml beef broth
2 tablespoons margarine or butter.
A dash of Worcestershire sauce.
120ml red or white wine
1 clove garlic, chopped up small
2 teaspoons fresh thyme
French bread stick
Gruyere or mozzarella cheese to top the bread
Salt to taste
ΒΌ teaspoon pepper

Recipe Instructions

Prepare the onions.
Peel the onions and chop them up into small pieces. Put the margarine/ butter in a frying pan and heat it over a medium heat. Add the onions and cook them until they are a light brown color stirring every minute to ensure they are evenly cooked.

Cook the soup.
Remove the onions from the frying pan and place them in a large saucepan. Add all the other ingredients except the bread and the cheese. Cook the soup for 30 minutes over a medium heat until the onions are soft.

Make the croutons.
Cut the bread into slices and toast them lightly under the grill. Remove and spread each slice with cheese, return the bread to the grill and cook until the cheese is bubbly.

Place the soup in warmed soup bowls and place the bread on top of the soup.
