French Onion Soup with Cheese Croutons Recipe

An appetizing onion soup that everybody will surely love

A delicious French soup that can be served at any occasion.


700g onions, thinly sliced
50g butter
½ level teaspoon granulated sugar
275ml dry white wine
2 tablespoons olive oil
1.2 liters beef stock
2 tablespoons Cognac
2 cloves garlic, crushed
Salt and freshly ground black pepper

For the croutons:
French bread or baguettine, cut into 2.5cm diagonal slices
1-2 cloves garlic, crushed
1 tablespoon olive oil

To serve:
225g Gruyère, grated
6 large or 12 small croutons

Recipe Instructions

Preheat the oven to 180C.

Make the croutons.
Drizzle the olive oil onto a large baking sheet and add the crushed garlic. Spread the oil and garlic all over the baking sheet. Place the bread slices on top of the oil and turn them to ensure both sides are coated. Place them in the oven and bake for 20 – 25 minutes until they are crispy.

Cook the soup.

Melt the oil and butter in a saucepan over a high heat. Once heated, add the onions, garlic and sugar and cook for 6 minutes stirring occasionally until the onions have browned. Reduce the heat and leave the onions to cook for 30 minutes until the onions have caramelized on the bottom of the pan. Pour in the stock and white wine, season and stir with a wooden spoon making sure you scrape the bottom of the pan well.

Bring the soup to simmering point then turn down the heat to the lowest setting and cook gently for 1 hour uncovered.

To serve.
Warm the soup bowl in a low oven and pre-heat the grill on high. Spoon the soup into the bowl and place the croutons on top. Sprinkle over the grated Gruyere then place the soup bowls under the grill until the cheese is golden brown and bubbling. Serve immediately.
