French Onion Soup Recipe

An ideal onion soup to keep you warm on winter nights

A delicious French soup that is rich and hearty, perfect for a winter evening.


5 onions
20g butter
750ml fresh beef stock
3 garlic cloves
4 tablespoons balsamic vinegar
2 or 3 glasses of red wine
8 thick slices of bread
284g gruyère cheese, grated
Salt and pepper
10g flat leaf parsley

Recipe Instructions

Make the soup.
Peel the onions and garlic and slice them thinly. Sauté the onion and garlic in the butter using a large saucepan for 15 – 20 minutes until they have browned. Stir well and then add the red wine, stock and vinegar. Bring the mixture to the boil and simmer for 10 minutes. Season with salt and pepper.

Make the croutons.
Toast the bread slices and place the grated cheese on top. Place the bread slices under the grill until the cheese has melted.

To serve.
Leave the soup in the pan and place the sliced bread on top with a sprinkle of cheese. Place it under the grill until the cheese has melted and it has browned. Scatter with chopped parsley and serve from the pan.
