Classic French Beef Onion and Red Wine Casserole Recipe

A traditional beef casserole from France.


900gr stewing beef, cut into 5cm cubes
2 tablespoons seasoned flour
120gr Smoked Streaky Bacon, rind less and cut into 5cm lengths
2 tablespoons olive oil
30mg butter
2 medium onions, peeled and chopped
2 garlic cloves, peeled and chopped
1 Bouquet Garni, including a Bay Leaf
1 bottle heavy red wine
An equal quantity of beef stock
8-10 small button onions or shallots, peeled
60gr butter
225gr flat mushrooms, cut into quarters, stalks left on
1 tablespoon tomato purée
Salt and freshly-ground black pepper

Recipe Instructions

Marinate the meat.
Place the meat in a glass dish with the bouquet garni and marinate overnight.

Cook the bacon and onion.
Heat half of the first butter and olive oil mix in a casserole dish. Add the onions and bacon pieces and let them sweat for 5 minutes. Add the chopped garlic and fry for another minute. Remove the onion mixture with a slotted spoon and remove the pan from the heat.

Cook the meat.
Drain the marinating meat but keep the wine and herbs. Roll the meat in the seasoned flour. Reheat the casserole dish and add the remaining butter and olive oil mix. Fry the meat in batches until it has sealed on all sides and set aside.

Cook the onion / shallots.
Fry the button onions / shallots in the second batch of butter until they are golden. Remove them from the pan and add the mushroom quarters plus the remaining butter. Cook until they have absorbed the butter. Remove them and put them with the button onion / shallots. Set aside the bacon, button onions / shallots and mushrooms for the last stage of cooking.

Bake the casserole.
Put all the ingredients into the casserole dish that has a close fitting lid (except those you have set aside) with the herbs and mix together well. Add a little salt and pepper.
Place in the oven and cook for 2 hours at 150C. Remove and add the onions, mushrooms and bacon and mix well. Bake for another 30 minutes. When finished check the seasoning and it is ready to serve.
