2kg potatoes; washed, peeled and quartered
500g strong cheddar cheese, grated
4 onions; peeled and halved
1 tablespoon butter
2 tomatoes, sliced
A little milk if required
Salt and pepper to season
Boil the onions and potatoes.
Place the onions and potatoes in salted water and bring it to the boil. Lower the heat and simmer until the potatoes and onions are soft. Drain off the water. Remove the onions and chop them up finely.
Mash the potatoes.
Mash the potatoes with the butter and add a little milk if the mixture is a little dry.
Mix the ingredients:
Add the chopped onion to the mashed potatoes and mix in ¾ of the grated cheese. Mix until the cheese and onion is distributed throughout the mashed potatoes.
Place the mash mix in an ovenproof dish and roughen the surface with a fork. Sprinkle over the remaining cheese and place the sliced tomatoes on top. Place in a hot oven or under the grill until the top has turned golden and is bubbling. Serve immediately.
