Caramelized Onions and Camembert Parcels Recipe

A perfect vegetarian appetizer

An impressive starter or main course for a vegetarian that is easy to make.


2 Spanish onions, sliced
250g of ripe camembert, divided into 6 pieces
6 teaspoons cranberry sauce
50g butter
1 teaspoon white wine vinegar
2 tablespoons light brown sugar
400g filo pastry sheets
salt and pepper to taste

Recipe Instructions

Preheat oven to 200C.

Cook the onion.
Melt the butter in a saucepan and add the sugar and vinegar. Cook the onions over a low heat for 25 minutes until they have caramelized. Remove from the heat and allow them to cool.

Prepare the pastry.
Cut the filo pastry into 24 squares and layer the 4 sheets on top of each other turning a half turn each time to make a star shape. Use the melted butter to brush each layer as you go. Repeat until you have 6 stars.

Prepare the parcels.
Place a piece of cheese in the centre of each pastry star and top with the onions and a teaspoon of cranberry sauce. Enclose the filling with the pastry and pinch to seal. Brush the outside with butter.

Once you have prepared all the parcels, place them on a baking tray and bake for 10 – 15 minutes. Serve while till hot.
