Recipe Instructions

Preheat the oven to 190C.

Cook the meat.
Mix together the mince and sausage meat and dry fry the mince mixture in a large non-stick frying pan for 5 minutes until brown. Add the onion and celery and cook for another 3 – 4 minutes. Remove from the stove, season with salt and pepper and stir in the thyme, nutmeg, parsley, tomato puree and breadcrumbs.

Spoon the mixture into a 900g loaf tin and cover with tin foil. Place the tin in a large roasting pan filled with 2.5cm of boiling water. Cook in the oven for 40 minutes then remove the foil and bake for a further 40 minutes.

Remove from the oven and let the tin stand for 10 – 15 minutes to allow the meatloaf to firm up and transfer it to a warm plate.

Heat the oil and fry the onions, garlic and sugar in a large frying pan for 3 – 4 minutes until golden brown. Stir in the flour and cook for another 3 – 4 minutes. Add the stock and the Worcestershire sauce and bring the liquid to the boil. Reduce the heat and let the sauce simmer for 15 – 20 minutes.

To serve.
Slice the meatloaf and serve it with the onion gravy.
